Tasty Morning Health

Hello!  Wanted to share this yummy Recipe with you!  I have gluten allergies, so i am always looking for ways to "yum up" regular recipe's!  This morning delight is heavenly!! Like eating a big maple pecan rolll!
I found a baking mix that is gluten free at our Health Food Store that i just love!  Its brand name is
Fearn.  It is a 16 oz. box and runs about $2.50 per box.  After trying several gluten free baking mixes i find Fearn has the best consistency and you seriously cannot tell the difference between a pancake made with this mix and a pancake made with any regular mix.  There is a recipe right on the box for pancakes, however, i alter it to my taste.  The following is  my recipe. 

Gluten free Pancakes

1 Cup Fearn Brown Rice Baking Mix
1 Egg
1 Tbs. Olive Oil or Sunflower Oil
1 Teaspoon Real Vanilla
1/2 tsp cinnamon
1 Cup milk ( i usually have to add a couple of Tbls. more along the process to thin)
Mix together and make your pancakes as you would any other recipe!  I use real butter
as my no stick element and I ALWAYS use an Iron skillet to prepare
the pancakes.. It makes them so much better than a regular teflon type skillet.  

Now~ in the same skillet, throw in a large handful of pecans (broken up a tiny bit).
Toss them around until they have toasted nicely, place on top of your pancakes.
I use only REAL maple syrup, no corn syrup wanna be's...  Heat it a bit and 
pour it over your stack of yummy pecan cakes!  

Okay, i know you are thinking this cannot be healthy!  Well, it is much more healthy than the regular pancakes most people have on their tables..  Here is why~ Your body does not process wheat nearly as well as it does rice.  This mix is made of rice flour.  The oil i used in the recipe actually has good elements for your body!  You get 8 g of protein!  Pecans are very beneficial for your health!  Finally, using REAL maple syrup is always going to be better than other man manipulated syrup because it is in its God Given form, all natural!  As with anything you eat, you cannot chow down on 12 pancakes and then wonder why you feel like a stuffed pig, and gain weight..  Trust me, this recipe is very satisfying and good for the body! 

Just a quick note ~ Here is a typical ingredient list for most syrups on the grocery shelf :
corn syrup, high fructose corn syrup, water, contains less than 2% of natural and artificial flavors, cellulose gum, salt, caramel color, sodium benzoate and sorbic acid (preservatives), sodium hexametaphosphate.  ***WOW***  (taken straight from a bottle!)
Did you notice there isn't one single mention if maple???  It really should read: "bottle full of chemicals and other junk"
